10 minute laksa

Finding a vegan/plant based Laksa paste can be a bit tricky, but you can make a delicious Laksa using red curry paste which is much more accessible (and affordable). Most supermarkets will carry at least one red curry paste which happens to be vegan but check the ingredients to make sure there is no shrimp paste.

This Laksa is super simple and easy and will warm you right up.


RECIPE:


2 tbsp red curry paste 1 can coconut milk (300ml) 2 cups water

1 serve of noodles - I like to use soba or ramen noodles 1 cup baby spinach 1/3 cup green beans 100g tofu, tofu skins or protein of choice Handful green onions

1/4 lime juice


  1. Cook noodles according to packet instructions and add to a large bowl.

  2. In a pot, heat the curry paste with the coconut milk and stir. Add the water and stir on a low to medium heat.

  3. Add the green beans, green onions and lime juice and keep stirring as it slowly heats up.

  4. Add the spinach and tofu to your bowl with the noodles.

  5. Once the laksa soup has heated through (after 10 mins) pour it into the bowl on top of the noodles and tofu.

  6. Garnish with fried onions and serve hot.
