These delicious caramel bars only need 4 ingredients - almonds, peanut butter, dates and dark chocolate. I want to say they're "healthy" treats but honestly they taste so good you don't even need to say it.
I like keeping these in the freezer - they get a little too soft for me in the fridge. There is no baking required, simply set in the freezer, then slice into bars and enjoy!


RECIPE:
This makes a smallish serve - I cut mine into 6 mini bars and I set it in a small square container 13cm x 13cm.
150g almonds
120g peanut butter (divided into 2)
100g dates
40g dark chocolate
Water as much as needed until texture is right
1️ In a blender process the almonds to form a flour. You can also use almond flour or almond meal.
2️ Add it to a bowl with half the peanut butter (melt it a little first so it’s runny) and add about 20g water. Mix until it sticks together. Add more water if needed.
3️ Press into a lined container and freeze for 30 mins, prepare the caramel in the meantime. I used a square container 13 cm wide to set it.
4️ In a blender add the pitted dates and the other half of the peanut butter. Mix and add small amounts of water gradually until it forms a smooth caramel.
5️ Remove slice from the freezer and top with the caramel. Return to freezer for 2 hours.
6️ Remove from the container and slice into bars. Melt the chocolate and drizzle on top. I usually do the lazy thing and put the chocolate in the microwave to melt. I remove it before it is completely melted and then stir until it melts or you can heat a small pot of boiling water and place the chocolate inside a bowl and place the bowl on top of the pot so the steam melts it.
Store in the fridge but if you prefer them to harden up a little more, keep them in the freezer like me and enjoy whenever you want a sweet treat :)
