RECIPE:
Single serve
4 tbsp plain flour (60g)
1 1/2 tbsp granulated sugar (30g)
1 tsp cocoa powder (10g)
4 tbsp soy milk (80g)
1/4 tsp apple cider vinegar (2g)
1 tbsp biscoff spread (30g)
1 biscoff cookie for topping
In a microwave safe bowl or mug, combine the flour, sugar, cocoa powder milk and apple cider vinegar.
Mix together until flour is no longer visible.
Spoon the biscoff spread into the middle of the cake mix. Gently press it down.
Place the biscoff cookie over the top and gently press it down. Microwave for 90 seconds. Enjoy!
Microwave times may vary depending on your microwave. Mine cooks it perfectly in 90 seconds, the top of the cake be soft but bounce back if you gently press it.
