almond peanut butter balls


I love making these because they're ready in 30 minutes or less and they are date free so for all my low-fodmap people out there (or anyone who gets a bit of an upset tummy from dates) these are perfect for you!


I keep these in the fridge and snack on them throughout the day, so tasty and great to prep for the week.


RECIPE:

This made about 10


2 cups almond meal

2 tbsp vanilla protein powder

1 tbsp mixed chia seeds (optional)

1 tsp coconut oil

1 tbsp maple syrup

1/4 cup peanut butter, melted

+ water if needed


+ 1/4 cup dark chocolate

1️ In a bowl combine the almond meal with the protein powder, coconut oil, maple syrup and chia seeds. Mix together and add a tiny bit of water if needed so it sticks together.

2️ Roll into smooth balls and place in a container, place in the freezer for 15 mins.

3️ Melt the chocolate and stir as it cools slightly. Remove the balls, spoon some of the melted chocolate over the top of each. Return to freezer for 5-10 mins to set.


Once set I store them in a container and keep them in the fridge for up to a week. Yum!
