Biscoff almond slice

I only recently tried Biscoff for the first time recently and I immediately wanted to make some desserts with it. This delicious three layer slice is made with only 5 ingredients and will leave you wanting mooooore.. no baking required either so just blend, set and enjoy.


RECIPE:

This made 4 squares


Base:

1 cup almonds, ground 2 tbsp coconut oil

1 tbsp maple syrup

1 tbsp cacao powder

Pinch of salt


Top layer:

1/2 cup Biscoff, melted

2 tbsp coconut oil


Plus 2 tbsp chocolate, melted for drizzle


  1. Add the almonds to a high powered blender and blend down to form a flour. Transfer to a bowl and mix with the coconut oil, maple syrup & salt. You can do this in the blender, I didn’t want it sticking to the bottom so I did it in a bowl.

  2. Transfer to a container lined with baking paper. I used a small 10cm square container. Press it in until the top is smooth and place in the freezer for 10 to 15 mins while you prepare the next step.

  3. Add the Biscoff to a bowl and melt in the microwave for about 20 seconds. Add the coconut oil and mix together. Remove container from the freezer and pour the Biscoff on top. Return to the freezer for 1 hour.

  4. After 1 hour, melt the chocolate. Remove the container and pull out the slice by the baking paper. Drizzle the melted chocolate on top. Cut into desired pieces and enjoy!

Store these in a container and leave them in the freezer, removing about 15 mins before serving. You can also keep them in the fridge but I find it gets super soft and I prefer it to harden up a little bit more.
