bite sized snack bars

I'm a sucker for anything bite sized or mini. I used an ice cube tray to set these healthy, no bake raw bars. Ice cube trays are a great way to set some raw treats, they come out in the cutest little mini sizes. I made these with a protein powder (Botanika Blends in the Custard Filled Cinnamon Donut Flavour) if you prefer to make these without protein powder, I would replace it with an extra 40g of oats.

RECIPE:

This makes approx. 12 - 14

20g almonds

20g pecans

45g oats

40g (1 serve) protein powder - I used custard filled cinnamon donut flavour

30g maple syrup

45g almond butter

+ dark chocolate for coating

1️ Combine ingredients in a blender and mix until smooth and sticky. If needed you can add a tiny bit of water to help it stick together.

2️ Spoon mixture into an ice tray. Press it in using your hands. Set in the freezer for 2 hours.

3️ Melt the dark chocolate, stirring continuously and then let it cool for 3 to 4 mins.

4️ Pop out the bars from the ice tray. Dip each one in the melted chocolate, use a fork to let excess chocolate drip down into the bowl. Place down on a tray lined with baking paper and repeat with remaining bars.

They should set pretty quickly. Place tray in the fridge for 5-10 minutes until they set. Then you can place them inside a container and store in the fridge. Enjoy!
