caramel slice

These delicious slices are dairy-free, gluten free and require no baking woohoo! Made up of 3 delicious layers - an oat based base, peanut buttery creamy middle and topped with raw cacao chocolate. It's a tasty sweet treat but made with all wholesome ingredients.




Base:

6 medjool dates ½ cup oats ½ cup cashews

½ cup shredded coconut

1 tbsp water


Middle:

½ cup shredded coconut

½ cup cashews 2 tbsp peanut butter 2 tbsp maple syrup 1 tsp vanilla extract 1 tbsp coconut oil

Chocolate top:

2 tbsp coconut oil 1/4 cup maple syrup (add a little more for a sweeter taste) 1/2 cup raw cacao powder


1. Soak the dates in warm water for a minute or two, while they are soaking combine all other base ingredients in a blender and mix until the oats the ingredients are fine. Add the pitted dates and mix until you have a sticky mixture. Transfer to a square or rectangle container and press the mixture down flat. Use a piece of baking paper to line the tray so you can pull it out easily later.


2. Prepare the middle layer by combining all ingredients in a blender and mixing until you have a smooth creamy mixture. Spoon on top of the base mix and use the back of the spoon to smooth out the top. Place in the freezer for 15 mins while you prepare the top layer.


3. You can either use melted vegan chocolate for this or make this layer with cacao powder. To make the layer, combine the topping ingredients in a blender and mix, you’ll only need to give it a quick mix to combine. Remove tray from freezer and spoon the chocolate mixture on top. Smooth it out with the back of a spoon and then return to the freezer.


Let it set for about 2 hours and then remove and slice into desired pieces. Keep refrigerated or you can keep in the freezer too. If you store in the freezer, leave it out for 15 mins or so to soften before eating :)
