carrot + cinnamon muffins

The perfect flavour combination for winter! These muffins were so quick and easy to prepare with just one bowl and they only take about 20-25 mins to bake. The carrot and cinnamon are delicious together! They're also a great way to add some veggies into your baking (yes that's what I tell myself as I scoff them all down) I hope you try these if you want a quick tasty treat this winter :)



RECIPE:

Makes about 10


1 1/2 cups self raising flour 1/2 cup brown sugar 1/2 tsp baking powder 1/4 tsp baking soda pinch of salt 1 cup plant milk (I used soy) 1 tsp apple cider vinegar 1 tsp vanilla extract 1/4 cup vegetable oil 1 carrot shredded

1/2 tsp cinnamon


Toppings:

Coconut yogurt & crushed walnuts


1️ Preheat oven to 175°C.

2️ In a bowl combine the flour, sugar, salt, baking powder + soda.

3️ Add the milk, vanilla, vinegar, oil and shredded carrot. Mix together. Add the cinnamon and mix to form a thick batter.

4️ Pour mixture into muffin liners or a muffin pan.

5️ Bake for about 20-25 mins or until a skewer comes out clean. Remove and let them cool on a cooling rack.

6️ Top with a dollop of coconut yogurt and crushed walnuts. Enjoy!
