Cheesy pesto scrolls

Who loves savoury scrolls? These delicious scrolls are soft and fluffy, filled with pesto and vegan cheese. These are great to have as a quick on-the-go breakfast or for lunch. If you love pesto you will love these tasty scrolls :)



RECIPE:

2 cups plain flour 1/2 tsp sugar Pinch of salt 1 cup soy milk 1/2 cup vegan margarine/butter Pesto (about 1 cup) Vegan cheese of choice For the yeast: 2 sachets dry yeast 1 tbsp brown sugar 6 tbsp warm water


1️. In a cup combine the dry yeast with sugar & warm water. Mix & set aside to thicken. Why do I use 2? Why not 🤷🏻‍♀️ 2️. In a large bowl combine the flour, sugar and salt. Melt the butter and mix with the milk. Add to the bowl. Mix together and add the yeast. Mix to form a soft dough. If too dry add a bit of water. Form a ball and let it sit in the bowl (covered) for 45 mins to 1 hour to rise. 3️. Once risen, transfer to a clean floured surface and knead for a few minutes. Use a rolling pin to roll it out into a rectangle. 4️. Spread the pesto on the dough evenly and top with your favourite vegan cheese. 5️. Roll it up to form a log. Cut into equal pieces and lay flat in a baking dish. Brush with extra melted butter (or olive oil) and any extra pesto. 6️. Let it sit for a further 15 mins then bake in the oven at 190°C for about 25-30 mins or until cooked through. Remove and let them cool. Store in a container in the fridge for up to a week (or devour immediately)
