chickpea cookie dough bites

I am completely obsessed with these chickpea cookie dough bites. They're so delicious, addictive and they take just minutes to make in a blender. No baking required, just set them in the freezer and they're ready to enjoy.


The chickpeas work beautifully in this recipe and create a perfect cookie dough texture. I'm in love with these and I hope you guys try them.



RECIPE:

Makes about 14 balls


1 can chickpeas, rinsed and drained 1/4 cup vanilla protein powder 1 tbsp coconut sugar 2 tbsp peanut butter Pinch of salt


For the coating: 3/4 cups dark chocolate, chopped 3 tsp coconut oil


  1. In a blender combine the chickpeas, protein, coconut sugar, peanut butter and salt. Mix together until you have a smooth texture that sticks together.

  2. Using your hands, scoop about 1 tbsp of the mixture and roll into balls. Place flat on a tray. Repeat with remaining mix. Place them in the freezer for 15 mins.

  3. Melt the dark chocolate using the broiler method or in the microwave, stirring as it melts. Add the coconut oil and stir together. Let it cool for a few mins.

  4. Remove the balls from the freezer and using a fork, dip each ball in the melted chocolate to coat it. Place it on a tray lined with baking paper and repeat with remaining balls. Return to the freezer to set for about 30 mins. Once they're set you can store them in a container in the fridge for up to a week.

I prefer to store them in the fridge so they stay nice and soft, I promise they will not even last a week, they are too good!



This recipe has been adapted from Eating Bird Food - the original recipe calls for almond butter and choc chips in the cookie dough which I left out.
