These chickpea and dark chocolate cookies are such an easy no-bake healthy treat.
Why chickpeas? They’re high in protein and soft like cookie dough, the texture of these are very soft but with a nice crunch from the outer chocolate layer. It's like eating cookie dough in the form of a cookie! You could even add some chocolate chips to the cookie batter mix if you want to take this to the next level.
The taste of the chickpeas deepens the longer they keep so you will be able to taste the flavour get richer over a couple of days.



RECIPE:
Makes about 10
1 can chickpeas, drained
1/4 cup vanilla protein powder
1/4 cup almond meal
2 tbsp maple syrup
1 tsp coconut oil
1 tbsp peanut butter
+ dark chocolate for coating (about 1 cup)
1️ In a high powdered blender, combine all ingredients. Mix together until the mixture is well combined and smooth.
2️ You should be able to roll it into smooth balls with your hands easily and without it sticking to your hands much. Roll into balls and flatten slightly. L
3️ Place on a lined tray and freeze for 30 mins.
4️ Melt the dark chocolate in a small bowl. One by one, place each cookie inside and flip over to coat. Let the excess chocolate drop off before placing back down on the baking paper.
5️ Repeat with remaining cookies and set in the freezer for 15 mins. Then transfer to a container and store in the fridge. Enjoy!
