These classic choc chip cookies are my absolute favourite, so easy to make and they always turn out amazing. Soft, chewy and DELICIOUS! You can whip these up quickly and show your friends how EASY vegan cookies can be.
I like my cookies CHUNKY so if you want them chunky, remember not to roll the dough into smooth balls. Rolling them into smooth balls will make them smooth and thinner (also yum) but if you want chunky cookies, grab a chunk of dough with your fingers and place down on the tray.
Important: the trick to CHEWY cookies is to only cook them for a short amount of time, you want to take them out of the oven before they start to go brown. Even just a couple of extra minutes in the oven will make a difference and make them less chewy. They will still be delicious but if you're after that chewy texture, keep a close eye on the time.

Recipe:
220g vegan butter or margarine 225g caster sugar 300g plain flour 1 tsp baking powder 1 tsp vanilla extract Pinch of salt 150g vegan choc chips
1. Combine the softened butter + sugar and mix. Add the flour, baking powder, vanilla extract & salt. Mix to form a soft dough (you can switch to using hands) Add the choc chips and combine together using your hands.
2. Preheat oven to 180°C
3. Use your hands to grab small sections of the mixture and place on a lined baking tray.
4. Bake for about 12 mins (10-12 mins for chewy)
5. Let them sit on the hot tray for 5 mins before gently moving them to a cooling rack. Enjoy!
