These delicious choc chip muffins are a classic and they're entirely dairy-free, egg-free and vegan!
You can use any of your favourite vegan choc chips or chop up some dark baking chocolate.

Recipe:
Makes 12 2 cups plain flour 2 tsp baking powder 1/2 tsp salt 1 tbsp coconut oil 1 cup soy milk or plant milk of choice 1/4 cup sugar (you can also use maple syrup as a sweetener) 2 tsp apple cider vinegar
1/2 tsp vanilla extract 1 cup vegan chocolate chips/chopped up chocolate
1. In a large bowl, combine the dry ingredients first and add the wet ingredients last. 2. Mix together until you have a smooth and creamy consistency. 3. Add the chopped chocolate chips and fold through. 4. Spoon the mixture into a muffin tray so they're 3/4 full. Sprinkle more chocolate on top. 5. Bake for 12-15 minutes or until they're a golden brown and a skewer comes out clean.
