So I recently found some silicone reusable mini loaf pans and I've been obsessed with using them to make all sorts of treats (they are SO handy!) so here are my Chocolate peanut butter protein mini loafs. I've been having one a day with tea and they're such a tasty treat.
I like adding protein powder because it tastes good, adds a bit of flavour and helps me get a bit of extra protein in my day :) You can use any protein powder you like and a vanilla or chocolate flavour will work too. I used macromike in chocolate peanut butter flavour.

RECIPE:
1 1/2 cups flour
1 serve protein powder (I used Macromike in choc peanut butter flavour)
1/4 cup sugar
1 tsp baking powder
1 cup milk
1 tsp apple cider vinegar
1 tsp vanilla extract
1 banana
1 tbsp oil
1 tbsp cocoa powder
1️. Preheat oven to 175°C. In a bowl mash the banana and add the rest of the wet ingredients. Mix together.
2. Add the dry ingredients and mix together with a spoon until flour is mixed through.
3. Spoon mixture into a loaf pan or alternatively a muffin pan. I used a silicone one as they are very easy to work with.
4️. Bake at 175°C for 30 mins or until a skewer comes out clean.
5️. Remove from oven and let it sit for 10 mins before transferring to a cooling rack. Drizzle with extra peanut butter and sprinkle with cacao nibs or any other topping like crushed nuts, seeds etc. Store in a container in the fridge for up to a week. Enjoy!!
