Who loves scrolls? These delicious scrolls are soft and fluffy, topped with vanilla frosting and a drizzle of chocolate. The perfect treat when you're craving something sweet. They're actually quite easy to make but they just take a bit of patience - waiting around for the dough to rise, so these are perfect to make if you're spending a day at home :)




RECIPE:


1 cup warm water 3 tbsp brown sugar 1 tsp dry yeast 4 cups plain flour Pinch of salt 1/2 cup vegan butter 1 tbsp cinnamon sugar For the topping: 1 cup icing sugar 1/2 cup vegan butter Chocolate to drizzle on top 1. Combine the warm water, sugar and yeast. Mix and let it sit for 5 mins to thicken. 2. Add yeast mix to a large bowl with flour and salt. Mix to form a soft dough. If it’s sticking to your hands too much add more flour. Form a ball and place in a bowl that has been brushed with oil on all sides. Cover with cling wrap and let it sit for 1 hour to double in size. 3. Once doubled in size, transfer to a clean floured surface. Knead for a couple of minutes then roll out into a rectangle shape. Spread the butter on top and sprinkle with the cinnamon sugar. 4. Roll up to form a log and cut into pieces - I cut into 9 pieces as I used a square baking dish. Once cut into pieces place them flat in a greased baking dish. Cover and let it sit for a further 30 mins to rise more. 5. Bake at 175°C for about 20-25 mins or until a skewer comes out clean. Remove and let them cool for 15 mins. 6. Combine the butter with icing sugar until you have a smooth, thick frosting. Spread onto each scrolls. Drizzle with melted chocolate. ENJOY!


I keep these at room temperature and put them in the fridge the next day - if there is any left that is!
