I never knew making your own shortbread cookies could be so simple! They're easy to make and so delicious - just as I remember classic buttery shortbread cookies to be. You'll need a vegan butter or margarine - I used Nuttelex which is a brand we have here in Australia.

Recipe:
225g vegan butter 250g plain flour 100g caster sugar 1 tsp vanilla extract
Soften butter first before adding other ingredients, then mix to form a dough. Add more flour if too sticky (I ended up adding a little more to roll out) roll out the dough to about 2cm thick and cut out desired shapes. Bake them on a lined baking tray at 190° C for 10-12 mins.
You can enjoy them plain or decorate, I used icing sugar and a piping bag to decorate :) You could also drizzle with melted chocolate.
