If you're looking for an easy no bake treat that's fudgy and delicious, I have just the recipe for you. I make these with coconut flour and peanut butter but the best part is the soft caramel which I make with a little added yogurt. These are especially great in summer, I love snacking on these straight out of the fridge on a warm day.


RECIPE:
Makes 12 small squares
Base:
1 cup coconut flour
1 tbsp cocoa powder
1 tbsp vanilla protein powder
1 tbsp coconut oil
1/3 cup peanut butter
2 tbsp maple syrup
Caramel layer:
1/4 cup runny peanut butter
1 tbsp maple syrup
1/4 cup almond yogurt
+ 1/4 cup dark choc for the top
1️ Combine the base ingredients in a blender. I melted the coconut oil and peanut butter together and then added them. Mix until it sticks together.
2️ Press into a lined loaf pan or container. Freeze for 15 mins.
3️ In a bowl combine the yogurt, peanut butter and maple syrup. Mix together. Remove the base from the freezer and spoon this layer on top and smooth the top with the back of the spoon.
4️ Return to the freezer for 1 hour. Melt the dark chocolate. Pour it on top and let it set in the freezer for another 10 mins.
5️ Slice into pieces and enjoy! Store in a container in the fridge for up to 5 days.
Tips: Before slicing, heat the knife so it cuts smoothly through the chocolate and doesn’t break it. You can hold it under hot water or I just hold it over my gas stove top for 10 seconds.
