I’m a big fan of couscous so I always have some in my pantry (multiple types actually) and this is one of my favourite ways to use it. In this dish I like to use a spicy vegan sausage, chopped capsicum and kale. Such a simple combo but the flavours are delicious! Pair it with a fresh hummus and you won't be disappointed.
This is perfect for a midweek or weekend dinner, you can easily double the recipe to serve 4 too.


RECIPE:
Serves 2
2 vegan sausages, sliced into pieces
2 spring onions, sliced
2 cloves garlic, chopped
2 tbsp olive oil
1/2 cup cooked couscous
2 cups kale, chopped into pieces
1 yellow or orange capsicum, diced
1/4 tsp paprika
1/4 tsp ground cumin
Salt & pepper to taste
Lemon juice to drizzle
Hummus for serving
1️ In a large pan, heat the olive oil on a low to medium heat. Add the chopped onion and garlic. Stir and cook for 1-2 mins. Add the chopped sausage pieces and cook for about 5-8 mins or until they start to turn brown.
2️ In a separate small pot heat 1 cup water. Once it starts to boil add the couscous. Remove from heat and let it sit to soak up the water for about 5 mins.
3️ Once water is soaked, fluff it up with a fork and add it to the pan with the sausage. Mix through.
4️ Add the kale chopped into bite sized pieces. Season with the spices, salt & pepper. Mix and add a squeeze of lemon juice. Divide into two bowls and serve with hummus. Enjoy!
