This has quickly become one of my favourite things to make. It's creamy, dreamy and so delicious! I love it with salads, burgers, sandwiches and wraps. It works beautifully in a Caesar salad with vegan chicken (I like to use Fry Family nuggets) Yum!
1 cup cashews, soaked 1 tbsp mustard
1/2 lemon juice 1 clove garlic 1 tbsp nutritional yeast 1 tbsp olive oil 1/2 cup to 1 cup of water* Pinch of salt and pepper
* If you want a thicker sauce, start by adding small amounts of water gradually. If you want a thinner sauce you can drizzle, add a little more water.
1. Soak the cashews for a few hours prior to making this recipe, or you can speed-soak in boiling water for 1 hour.
2. In a processor or blender combine the cashews, mustard, lemon juice, garlic, nutritional yeast, olive oil, salt/pepper and water. Blend until smooth and creamy (about 45 seconds) gradually add small amounts of water until you reach a smooth and creamy texture - you can add more water if you want to drizzle it or less water if you want it thicker. Add to salads/burgers/wraps and enjoy!
Store in a jar in the refrigerator for up to a week.
