crispy waffles

I was lucky enough to be gifted a waffle maker from my boyfriend and since then I've been trying to make the perfect crispy waffles. They kept coming out a bit too soft and fluffy - like pancakes.

After many tries I've finally gotten them as golden and crispy as I'd like and they taste amazing!



Recipe:

makes 2 waffles

1 cup plain flour 1 tsp baking powder 1/4 cup caster sugar 1/2 cup soy milk 1/4 cup melted vegan butter or margarine (I used Nuttelex) 2 tbsp vegetable oil


Add the dry ingredients to the bowl first and then add the wet ingredients. Stir until the mixture is thick, smooth and creamy. I repeat, the mixture should be THICK!


Spoon half the mixture in to the heated waffle iron and cook for about 5 mins on both sides until golden brown and crispy. Different waffle irons may have different cooking times - I see online that most say to cook for a couple of minutes but mine works better when I cook for a little longer.


Repeat with the remaining mixture and serve with maple syrup or fresh fruit or any other toppings you'd like. Enjoy your vegan waffles!
