easy pad thai

When I first went vegan I thought Pad Thai would be a thing of the past - which bummed me out because I have LOVED Pad Thai for as long as I can remember. It's a classic!


Now I make this delicious meal at home regularly and it is so easy! Traditionally Pad Thai sauce will include some fish sauce and if you can find a vegan fish sauce you can most certainly add it to the recipe. I do have some vegan fish sauce in my pantry BUT I wanted to make this recipe accessible to everybody to I chose not to use it as I didn't really think it needed it. This is so delicious and I hope you all get to try it :)



RECIPE:

1 packet rice noodles 1 block firm tofu 2 cloves garlic, minced Half a bunch green onions, diced 2 tbsp olive oil For the sauce: 1 1/2 tsp Tamarind paste 1/2 cup soy sauce 4 cloves garlic 1 tsp chilli sauce 1 tbsp coconut sugar 2 cloves garlic, minced Juice of 1 lime Water as needed


1️. In a small saucepan combine the ingredients for the sauce. Stir as it heats and add a little water (adjusting to taste) stir to thicken. I think this works nicer when cooked together but if you are running short on time you can combine these in a bowl instead. 2️. In a large pan heat the olive oil and add the tofu, cooking on all sides (for about 10 mins) 3️. Add the garlic and green onion and stir through. Next add the noodles (pre cooked if needed) 4️. Add the sauce to the pan and stir through until nicely coated. Serve warm with a wedge of lime. Enjoy!
