SIMPLE UDON NOODLES 🥥💫
I love a quick and easy 15 minute dinner using whatever I have in the fridge or the pantry at the time. Since I am a noodle addict, I always have some kind of noodles in my pantry (I think they're such a good staple to have) and I always keep a big bottle of sweet chilli sauce in my fridge so I can use it in easy recipes like this.
This simple noodle dish was really tasty with a little kick from the chilli flakes. If you want a quick midweek meal this might be the one for you :)


RECIPE:
Serves 2
Udon noodles for two
1 carrot, sliced
2 cloves garlic, chopped
3 or 4 spring onions, diced
3 tbsp sweet chilli sauce
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp chilli flakes
Pinch of black pepper
(Optional) pinch of paprika and ground ginger
1️ In a small bowl, mix the sauce together by combining garlic, half the green onion, soy sauce, sweet chilli sauce, vinegar, the spices and 1/4 cup water. Set aside.
2️ In a pan, heat the carrot and noodles (I pre cooked my noodles in water)
3️ Add green onion and mix. Add the sauce and stir through. Cook until heated and carrot softens a little.
4️ Serve and garnish with extra green onion or fried crunchy onion 😊
