I need to share this recipe with the world because they are truly the BEST pancakes I've ever had. So thick and fluffy, so delicious every time. The recipe is so simple, stop what you're doing and make these now because you will not be disappointed!
I used to use 1 cup of milk but have since updated this recipe to 3/4 milk, this makes the mixture super THICK and you are guaranteed to have thick, fluffy, delicious pancakes!

Top with your favourite toppings such as fresh strawberries, raspberries and maple syrup or go all out with a scoop of your favourite dairy-free vegan ice cream. I used Over The Moo which is an Australian brand of vegan ice cream and it's pure heaven.

Recipe:
3/4 cups soy milk (or plant milk of choice)
1 tbsp Apple cider vinegar
1 tsp vanilla extract
1 cup plain flour 2 to 3 tbsp sugar 1 tbsp baking powder 1/4 tsp salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. Combine the wet ingredients in a bowl - the milk, vinegar and vanilla. Let it sit for 4 to 5 mins to thicken.
2. Add the dry ingredients - flour, sugar, baking powder and salt. Stir to combine and let it sit again for another 4 to 5 mins to thicken. The mixture will be very thick and it should be.
3. Spoon portions of the batter on to a greased pan and flip once it starts to bubble on top.
4. Flip and cook the other side. Remove from the pan and serve with your favourite toppings like fruit, coconut yogurt and maple syrup.
