gingerbread cookies

What better way to celebrate Christmas than with a batch of delicious vegan gingerbread cookies! These are so tasty, the whole family with love them. They're quite easy to make so if you've never made them before don't worry, get your piping bag ready and have fun!



I made a little vegan guy!

Recipe:


185g maple syrup 40g sugar 40g vegan butter or margarine

8g mixed spices (I used mixes spices, cinnamon, cloves, cumin, ginger)

335g plain flour 2g bicarb soda 8ml water

1. Heat the maple syrup in a microwave or stovetop (I used microwave for 45 seconds) and add it to a large bowl. Add the sugar, butter, spices and flour. Combine well.

2. Dissolve the bicarb soda in the water and add it to the dough. Roll into a ball and cover for about 1/2 hour.

3. Roll out the dough to about 5mm thick and cut out shapes. Place on a lined baking tray and bake at 180 degrees celsius for 10-12 mins until cooked. Let them cool before decorating.


To decorate, combine about 40g softened vegan butter with 250g icing sugar. The icing should be quite thick so that it can set hard. Enjoy!
