These sesame noodles are so quick and easy to whip up and are one of few noodles that I actually enjoy cold. They're great to have on a hot day or to take with you for lunch so you don't need to warm them up. But you can also enjoy these hot for an easy midweek dinner.


RECIPE:
Serves 2
Ramen noodles for two (you can use any noodles but I love Ramen noodles for these)
1 carrot, shredded
1 cup baby spinach
Handful green onion, chopped
For the sauce:
2 cloves garlic, minced
2 tbsp soy sauce
1 tbsp rice vinegar
3/4 cup sweet chilli sauce
1/2 lime juice
1 tbsp sesame seeds
1/4 cup water or more if needed
1️Cook noodles according to packet instructions (some may not need pre cooking)
2️ In a small bowl combine the ingredients for the sauce and stir together.
3️ In a small pot, combine the cooked noodles with the carrot & spinach. Add the sauce with sesame seeds. Mix together until well coated.
4️ Divide into two bowls and garnish with extra green onion or fried onion. Enjoy!
