Jam Christmas Shortbread Biscuits

It’s a festive time of year and I’m celebrating with these jam Christmas biscuits which are just delicious! They’re perfect to make for the holidays and share with your friends and family.


RECIPE:

This makes about 12


150g vegan butter (I used nuttelex)

110g dark brown sugar (caster would work too)

220g all purpose flour

1 tsp vanilla extract

1/4 tsp salt


+Jam for the middle

+ Icing sugar to dust


  1. In a bowl soften the butter and add the sugar. Cream together.

  2. Add the flour, vanilla and salt. Mix to form a sough dough. Chill in the fridge for 20 to 30 mins while you preheat oven to 175 degrees celsius.

  3. Place the dough in between two sheets of baking paper and roll it out, I like to go about 1.5cm thickness, any thinner and it will be hard to work with. (This is a very soft dough)

  4. Using a cookie cutter cut out the shapes and remove excess dough surrounding them. Using a smaller cookie cutter cut out the middle from every second cookie. Repeat with remaining dough. Bake for about 15 mins.

  5. Remove and let it rest for 10 mins, transfer gently to a cooling rack and once cooled, spread jam in between the cookies and sandwich together. Dust with icing sugar and serve.
