kale & walnut pesto

Why does kale always come in such a big bunch? Maybe like me, your household doesn't have a large number of people to feed so you may be looking for ways to use up that big bunch. You can make a really delicious and tangy pesto with kale, this is actually becoming my new favourite way to make pesto.


The walnuts add a really delicious flavour to the pesto and I also used some hemp seeds (which is optional) but if you do have them, they are a great addition to add some extra protein and omega-3 and omega-6.


You can store this in the fridge and use it with cooked pasta or as a delicious dip.


RECIPE:


2 to 3 cups fresh kale

1/2 cup walnuts

1 tbsp nutritional yeast

1 tbsp hemp seeds

1/4 cup olive oil

2 cloves garlic (or 1 clove Italian garlic)

1/2 lemon juice

Salt & pepper to taste


1️ Combine all ingredients in a blender. Process until kale is broken down and you have a chunky pesto consistency.

2️ Adjust salt and pepper to taste. If you want a smoother consistency you can add more olive oil or a bit of water.

3️ Transfer to a jar and store in the fridge.


Enjoy!


  • You can use as much kale as you like really. If you do use more, give it a taste and adjust the salt & pepper/olive oil.
