I have seriously been so hooked on these cookies, I've been making at least one batch per week. They are so soft, sweet and melt in your mouth. If you love the taste of lemon in your desserts then you will absolutely LOVE these cookies!
The secret ingredient for these is actually one of my favourite protein powders - Botanika Blends in Lemon Cheesecake flavour. This gives the cookies SO much flavour, I will often make this without lemon juice as the protein adds so much flavour as it is.

RECIPE:
makes about 8 cookies
50g vegan butter or spread
50g coconut oil or vegetable oil
50g Botanika Blends protein in Lemon Cheesecake flavour
50g caster sugar
100g self raising flour
3g vanilla extract (1tsp)
1 tsp lemon juice
For the icing: 1/4 cup icing sugar 1/2 tsp soy milk
If you happen to have this protein in this flavour, you can also use that for the drizzle on top with the milk - is it SO delicious this way!
In a bowl soften the butter. Add the sugar and protein powder and mix in.
Add the self raising flour, vanilla extract, lemon juice and oil. Mix together and once it starts to stick, switch to hands to mix and for a cookie dough.
Chill in the freezer for 10 mins while you preheat the oven to 185 degrees celsius.
Remove from the freezer, section off and use your hands to roll into balls and flatten. Place them on a lined baking tray.
Bake for 12-15 mins until they start to go golden on top. Remove and let them sit on the hot tray for 10 mins. Transfer to a cooling rack and let them cool.
Mix the icing sugar with the milk until smooth and drizzle over the cookies.
