What a combo! These slices are not only delicious but the texture is my favourite part. The bottom layer is soft and chewy, topped with a crunchy layer of maple pecan. I love how easy they are to prepare and I can just set them in the freezer. I used cacao butter for the top layer but if you can't find that you can use coconut oil instead.


RECIPE:
Base:
1 cup almond meal
1 cup coconut flour
2 tbsp peanut butter, melted
1 tbsp coconut oil
Pecan top:
1/2 cup pecans, chopped
1/4 cup maple syrup
1/4 cup cacao butter
1️ In a blender combine the almond meal, coconut flour, peanut butter, coconut oil and maple syrup. Blend together until mixture sticks together.
2️ Press it in to a lined loaf pan or small container. Pack it in further with the base of a heavy glass. Place in the freezer for 10 mins.
3️ In a small pot on a low heat, combine the maple syrup and cacao butter. You can use coconut oil instead if you prefer. Once it starts to bubble, add the chopped pecans and stir. Remove from heat.
4️ Pour the maple pecans on top of the base and smooth it out over the base. Return to the freezer for 1 hour. Slice into pieces and enjoy
