This simple cake took me less than 10 minutes to prepare (and probably less time to devour!) it was so delicious and super soft and fluffy. If you want to make a quick tasty treat with no hassle, give this a try.
I used some flax seed mixed with water as an egg replacer, you can substitute this with chia seeds or a mashed banana. I don't always use an egg replacement in my cakes so if you don't have this don't worry too much, you can leave it out. I think it helps give the cake a little rise but is not entirely essential.I always add baking powder and apple cider in there anyway to get some rise in my cakes.


RECIPE:
2 cups self raising flour 1 tsp baking powder Pinch of salt 1/3 cup sugar 1 tbsp apple cider vinegar 1/4 cup oil 1 cup almond milk 1 tsp vanilla extract 1 tbsp flax seed + 3 tbsp water For the swirl: 1/2 cup chocolate, melted
1️. Preheat oven to 180°C. 2️. In a bowl combine the dry ingredients first followed by the wet ingredients. Stir the flax seed + water in a cup separately to fluff up before adding to the mix (you can swap this for chia seed, a banana or just leave out) 3️. Mix together briefly, until flour is mixed through. 4️. Pour cake mix into a lined baking dish. 5️. Melt the chocolate in a microwave and stir. Spoon on to the cake mix and using a butter knife create some swirls. 6️. Bake at 180°C for 25-30 mins or until a skewer comes out clean. Let it cool on a cooling rack and enjoy! You can store at room temperature overnight to keep the moisture or refrigerate to keep for longer.
** If you don't have any dark chocolate, take 1/4 cup of the vanilla mix and stir in some cocoa powder. Spoon on top of the cake and use a butter knife to create swirls.
