If you love lemon flavoured cookies you will absolutely love these melting moments.
I made these with coconut flour but you can use regular plain flour too. The coconut flavour worked so nicely with the lemon so it's a great alternative.
For the cookie cutters I used the smallest round one I had (48mm). If you have trouble rolling the dough and cutting the round shapes, try rolling it a little thicker. I found that easier to work with and easier to cut.
This will make about 12 to 14 cookies so sandwiched together you will get 6 or 7 melting moments, depending on how thin you cut them.


RECIPE:
1/2 cup butter
1 cup coconut flour
1/2 cup caster sugar
1 tsp lemon juice
1/2 tsp vanilla extract
Pinch of salt
For the filling:
1/3 cup butter
1 cup icing sugar
1/2 tsp lemon juice
1. Soften the butter or spread in a bowl and add in the sugar. Stir together. Add the coconut flour, lemon juice, vanilla extract and salt. Mix to form a soft dough and cover then chill for 30 mins.
2. Roll the dough out on a floured surface, to about 1cm thickness and cut out round shapes with a cookie cutter. Repeat using all the dough. Place on a lined baking tray and bake at 190°C for 15 mins until golden.
3. Remove from oven and let them cool completely.
4. Prepare filling and place in a piping bag or you can spoon on top. Spoon the filling on every second cookie and sandwich them together. Enjoy!
Store in a container in room temperature.
