mini zaatar bites

Updated: Jul 1, 2020

Enjoy the taste of Palestine with these soft pillowy zaatar bites. They're herby, zesty and have so much flavour. I like to enjoy these as a breakfast on the go or with a cup of tea or coffee. You can find zaatar in some supermarkets otherwise in middle eastern grocery stores.

It's such a tasty herb and you can sprinkle it on anything - pastas, soups, pizzas and sandwiches. Give these a try if you love the taste of zaatar :)

RECIPE: For the dough: 1 sachet dry yeast 1/4 cup warm water 1 tbsp brown sugar 2 cups flour 1/4 cup olive oil 1 tsp salt For zaatar top: 1/2 cup zaatar 3 tbsp olive oil or more if needed 1️. Combine the dry yeast with warm water & sugar. Stir and let it sit for 5 mins to thicken. 2️. Once thickened transfer to a large bowl and add the flour, olive oil and salt. Mix together to form a soft dough. Knead for a minute or two and form into a ball. 3️. Spray some oil into a clean bowl (or brush on lightly) place dough ball into the bowl and cover with a towel or cling wrap. Leave it in a warm area of your home for 1 hour to rise. 4️. Transfer to a clean floured surface and knead for a minute or two. Cut into equal smaller sections and using a rolling pin flatten them out into small round shapes. 5️. Mix the zaatar with olive oil and spoon onto each small round dough. Let it sit for 15 mins. 6️. Bake at 160°C for about 25 mins or until dough looks golden and cooked through. Serve warm.
