I had some leftover vegan sausages that I wanted to use up so I whipped up a very quick rice dish and it turned out so delicious I had to recreate it. I used a sun-dried tomato base and this has a Peri Peri flavour which worked so well for lunch the next day too.


Recipe:
1 tbsp olive oil
1 tbsp sun dried tomato paste
2 to 3 cups of chopped up veggies including carrot, broccoli, cauliflower, capsicum, green beans.
500g cooked rice 1/2 lemon juice Handful of fresh baby spinach, chopped 4 x vegan sausages, chopped up 1 tsp paprika salt & pepper
1. In a pot, heat the olive oil and add the sausages. Let them brown a little and then add the tomato paste and veggies. Stir.
2. Add the rice and lemon juice and stir to coat. Once heated through, add the spinach and mix. Season with paprika and salt + pepper.
3. Remove from heat and serve. Store any leftovers in the freezer for another day.
