pb and j bars

I've made these bars so many times and they NEVER last! The combination of peanut butter and jam with the soft and chewy base is just SO delicious, it's one of my favourite summer no bake treats.


Just check the ingredients of the jam you want to use as some can contain gelatine, but most store jams are vegan.



RECIPE:


Base:

1 cup almond meal

1 cup oat flour

1 tbsp coconut oil

1 tbsp maple syrup

1 tbsp cocoa powder


Peanut butter layer:

1 cup peanut butter, runny or melted

1 scoop vanilla protein powder (optional - I just like the protein boost and the flavour it adds)


Jam layer:

1/4 cup jam

Chopped walnuts


1️ Combine the base ingredients and mix together until sticky (add a little water if needed) press into a loaf pan lined with baking paper. Freeze for 5 mins.

2️ Combine the peanut butter with the protein. Pour this over the top of the base layer and return to the freezer for 15 mins or until it hardens a little.

3️ Spread the jam over the top and sprinkle with the chopped walnuts. Set in the freezer for a further 30 mins. Slice into bars and enjoy.

4️ Store in a container in the fridge for up to 5 days.
