peanut brittle bars

Forget about preheating your ovens, these delicious bars are raw and only need to be set in the freezer. I make these with healthy pantry goods and they are always a hit.



RECIPE:

Makes 8 serves


Base:

50g oats

50g almonds

10g hemp seeds

15g cocoa powder

20g coconut oil

30g maple syrup

30g peanut butter

Middle layer:

75g peanut butter

20g coconut oil

20g maple syrup

30g chopped peanuts


Topping:

50g dark chocolate, melted


  1. Combine the base layer ingredients in a blender. Mix together until smooth and it sticks together. You can make this without a blender by using oat flour and almond meal. Press the mixture into a small loaf pan or container lined with baking paper so its easy to pull out later. I used one that measures 10cm x 17cm.

  2. Pack the bass layer in well using the base of a heavy glass (I like to place the glass over the top of the baking paper so it doesn't stick to the glass)

  3. Combine the middle layer ingredients and stir until mixed. If needed, melt the coconut oil in the microwave for 15-20 seconds. Spoon this mixture over the base and smooth over using the back of a spoon. Set in the freezer for 2 hours.

  4. Once set, slice into bars. Melt the dark chocolate, broiler method works best but you can also use the microwave at 30 second intervals, stirring in between each. Spoon over the bars. Sprinkle with crushed pecans.


Store in a container in the fridge for up to a week.
