This is one of my favourite recipes to make. They are SO easy, very little effort and they taste delicious. The perfect snack straight from the fridge. I added some protein powder in mine which you can leave out if you don't want to use it - and don't worry you won't need to replace it with anything else.
Give these a try if you want a quick tasty snack, I'm telling you, you will be hooked just like I am. No baking required woohoo!
For the toppers I used some chocolate moulds I have which I found at Daiso. You can top with anything, pretzels chocolate pieces or drizzle with melted peanut butter.


RECIPE:
For the base:
1/2 packet digestive biscuits 1/2 cup peanut butter 1/4 cup maple syrup 1 scoop protein powder (I used salted caramel flavour but vanilla or choc will work too)
For the top: 3/4 cups peanut butter 1/4 cup chocolate chips
1️. In a blender, add the biscuits and mix to break them down into a flour. If you want to make this without a blender you could add them to a sandwich bag, seal and take out the weeks frustration by punching the bag 🤣 2️. Add the peanut butter and maple syrup. Mix until it’s sticky, you can add a bit of water if needed. Press the mixture into a muffin tray about 3/4 full (silicone works the best) 3️. Place in the freezer for 10 mins while you prepare the topping. 4️. Melt the peanut butter and chocolate and mix together. Remove the muffin tray from freezer and pour the melted mix on top. Return to the freezer to set for 1-2 hours. 5️. You can add any other decorations on top, drizzle more chocolate, pretzels perhaps. I used choc silicone moulds to make these cute ice cream shapes 🤩 6️. Store them in a container in the fridge for up to 1 week.
