pretzel cookie bars

If you love a sweet and salty combo then you will love these bars! The base is made with almonds and coconut, topped with salted pretzels and drizzled with dark chocolate. No baking needed so you just mix it together and let it set in the fridge, then enjoy! The texture of the base is chewy and sweet, with a delicious sweet and salty crunch from the pretzels. I hope you try these bars for an easy and tasty sweet treat!




RECIPE:

Makes 4 squares


1 cup almonds (about 2 cups almond flour when ground)

1/2 cup coconut (1 cup coconut flour when ground)

1 tbsp maple syrup

1/3 cups cacao butter

1/2 cup peanut butter


Topping:

1/4 cup melted chocolate

Salted pretzels


1️ In a high powered blender, combine the almonds & coconut and blend down into a flour.

2️ Add to a bowl with the maple syrup, cacao butter & peanut butter - or you can blend this all together in the blender.

3️ Press into a container lined with baking paper - I used a small square one. Set in the fridge for about 2 hours.

4️ Remove from the fridge and cut into bars. Melt the chocolate and drizzle some of it over the bars, top with the pretzels and then drizzle more of the chocolate over the top. Enjoy!


Store in the fridge for up to 4-5 days if they last that’s long :)
