I've always wanted to try and make some soft pretzels so I finally gave it a shot. It's a fun recipe because you get to play with dough! You could dip these into something like a cheese sauce or if you prefer sweet, maybe some melted chocolate.
My tip would be to roll them out a bit thinner before you shape them because they do thicken up a bit as you cook them.
For the dry yeast:
1 tbsp brown sugar
6 tbsp warm water
2 sachets dry yeast
1️. Combine sugar and water and mix. Add the dry yeast and mix, let it sit for 5 mins.
why 2 sachets? I put extra yeast so it really rises to the occasion.
For the rest of the dough:
3 cups plain flour
1 tsp baking powder
Pinch of salt
2 tbsp sugar
1/2 cup vegan butter, melted
1 cup plant milk
Salt to sprinkle on top
You will also need 1/2 cup baking soda to soak the pretzels in water before baking.
1️. In a large bowl combine the flour, baking powder, salt and sugar.
2️. Melt the butter and heat the milk, they should be warm only and not hot. Add them to try dry ingredients.
3️. The yeast should be thick and fluffy now. Add to the bowl with the other ingredients and mix to form a soft dough. Use your hands to form the dough and knead for a couple of minutes. Cover the bowl with cling wrap and let it sit for 1 hour to rise.
4️. Once the dough has risen, transfer to a clean floured surface and knead for 5 minutes. Cut into small sections and roll into thin long rope like sections, now you can fold them into the pretzel shape. (I have no idea how to explain this so please watch my story video 😂)
5️. Preheat oven to 180°C
6️. Bring a pot of water to the boil - about 8 cups of water and 1/2 cup baking soda. Place each pretzel in the boiling water for 30 seconds only. This helps them get their golden brown colour. Place them on a lined baking tray.
7️. Brush each pretzel with olive oil and sprinkle with sea salt. Bake for 15 mins or until they are all golden. Remove and let it sit for 5 mins on the tray. ENJOY!
