singapore noodles

Is anyone else a noodle addict like me? If I'm not eating pasta you'll definitely find me eating noodles. This dish is so quick and easy to make, if you have limited time I really recommend it.

400g Singapore Noodles 3 cloves garlic, minced

1 bunch spring onions, sliced

60g baby spinach

1 cube ginger, minced

1 lime

1 tbsp soy sauce

1/4 cup sweet chili sauce

1 tbsp olive oil

1. In a large pan heat the olive oil and add the spring onions, garlic and ginger. Stir and cook for a few minutes until garlic is fragrant. 

2. Add the noodles, soy sauce and sweet chili sauce. Stir to coat.

3. Add the lime juice and spinach and mix together until noodles are heated through. Transfer into a coconut bowl and top with more spring onions and lime. Enjoy!
