Soba noodles are great because they cook quickly and can be served both hot and cold. They work perfectly as a base for a simple stir-fry or in a salad. I like to use it in my stir-fries, especially on a weeknight when I want a quick tasty meal with minimal effort. This recipe only takes me 10-15 mins to make and is a delicious and nourishing plant-based meal.

You can get creative with this and add more of your favourite vegetables, or keep it really simple like I did.

Recipe:
serves 2
Soba Noodles for two people 1 small broccoli 2 cups fresh spinach 1 tbsp olive oil Handful of raw cashews
For the sauce: 4 tbsp tamari 2 tbsp rice vinegar
1 tsp maple syrup (add a little more if you prefer sweeter sauce) ½ tsp paprika ½ tsp ginger Pepper to taste
1. Bring a small pot of water to the boil and cook the noodles for about 5 mins until they soften.
2. Heat the olive oil in a pan and add the broccoli and cashews. Cook for 5 mins until the broccoli softens.
3. Add the soba noodles, tamari, rice vinegar, maple syrup, paprika and ginger. Stir until the noodles and broccoli are evenly coated in sauce.
4. Add the spinach last as to not overcook it. Stir for about a minute and serve warm. Garnish with sesame seeds and enjoy!
