Who loves soft chewy cookies? If so then you will LOVE these bars! They’re made with Nature's Charm Sweetened Condensed Coconut Milk which is so creamy and just a dream in desserts, I highly recommend it.
They’re really easy to whip up too! The texture is the best part - a slight crunch on the outside but soft enough to be chewy.



RECIPE:
I used a square cake pan and cut these into 9 bars, you could cut them into smaller bars and make 12.
The cookie base:
2 cups self raising flour (275g)
1/3 cup caster sugar (78g)
1/4 cup dark brown sugar (40g)
1/4 tsp salt
160g or the sweetened condensed milk
80g nuttelex (vegan butter) melted
1 tsp vanilla extract
Choc layer:
Remaining condensed milk
100g dark chocolate chips
1️ Preheat oven to 175°C.
2️ Combine the flour, sugar, salt, melted butter, vanilla and sweetened condensed milk.
3️ Press the mixture into a square baking pan lined with baking paper - leave about 1/2 cup of the mixture for later.
4️ In a bowl add the rest of the condensed milk and the dark chocolate. Microwave for about 30 seconds and then stir together for the chocolate to melt.
5️ Pour over the base layer. Spoon the remainder of the cookie base mix over the top in chunks. Bake for about 18-20 mins. Remove and let it cool for 15 mins. Slice and enjoy!
Store in a container at room temperature and refrigerate if you have any left after the first day (you won't!) they'll stay good for about 4 to 5 days.
