spicy bean tacos

Bean tacos are one of my favourite meals to make, especially on a weeknight when I want a quick and simple nourishing meal. It's so easy to make and so delicious. You can pretty much fill your taco with anything you like but spicy beans is usually my go-to filling.


Beans are a great source of protein, fiber, potassium and they're inexpensive! You can use any beans that you like but black beans pack a little more fiber and magnesium than other types of beans so they're a great addition to a plant-based diet.




Recipe:


2 cans black beans (or you can use any beans you like) 6 soft tacos

1 tsp paprika

1 tsp cumin

2 cloves garlic, minced 1 tbsp olive oil 1 tsp Tabasco sauce

Coleslaw mix or veggies of choice

Taco sauce Avocado (optional) Coriander and fresh lime for garnish


1. In a large pan, heat the olive oil on medium heat. Add the minced garlic and stir through the oil. Let it cook for a minute until fragrant.

2. Add the beans, paprika, cumin, and tabasco sauce. Stir through so the beans are evenly coated in the spices. Cook the beans for about 7-10 minutes, stirring occasionally.

3. Remove from heat and transfer the bean mix to a bowl. Fill each taco with some bean mix and fresh veggies or a coleslaw mix. I love to use shredded carrot, cucumber, tomato and avocado.

4. Drizzle with taco sauce and garnish with fresh coriander and lime juice. Enjoy!


If you'd like to make your own taco sauce, combine 1 can of chopped tomato with onion, garlic, cumin, fresh coriander and salt to taste. You can also add a bit of cayenne pepper for a bit of a kick.
