I don't know about you but I'm a sweet potato addict! I love it baked, I love it fried and I love it blended into a latte (SO GOOD!) so I thought it was about time I added it to my muffins too. These muffins were soft and delicious, perfect in winter and with a cup of hot tea.
They're really quick to whip up and only take about 20 to 25 mins to bake.


RECIPE:
1/2 cup roasted sweet potato
1 cup soy milk
1 tsp cinnamon
1 tsp cinnamon sugar
Pinch of salt
2 cups self raising flour
1/2 cup brown sugar
1 tsp vanilla extract
1 tsp apple cider vinegar
2 tbsp vegetable oil
1️ Preheat oven to 175°C
2️ In a blender, mix the sweet potato and milk so you have a thick, smooth base. Pour into a bowl.
3️ Add the vanilla and apple cider vinegar and mix through.
4️ Add the flour, sugar, salt, cinnamon, cinnamon sugar and vegetable oil. Mix through briefly until flour is no longer visible, the mixture will be thick.
5️ Spoon the mixture into muffin liners or muffin pan. Bake for 20-25 mins or until a skewer comes out clean. Remove and let them cool for 15 mins before serving.
