tahini fudge bites

I made these delicious mini sized caramel bites by combining just 5 ingredients and it required no baking! Tahini adds such a beautiful nutty flavour so I love using it in raw treats like this. If you're looking for an easy but indulgent raw treat to make, give these delicious tahini caramel bites a try!






I set this in a container and then cut into 6 small squares. I like to use silicone moulds and trays with these types of treats as they are so easy to remove once set. If you're using a hard container to set it, line with some baking paper so you can pull it out easily later on.










RECIPE:


Base:

120g digestive biscuits

70g peanut butter

Water as needed


Caramel layer:

160g medjool dates

60g tahini

Water as needed


Top:

50g dark chocolate, melted


1️ Soak the dates in a bowl of hot water while you make the base, this will make them nice and soft.

2️ To make the base combine the digestive biscuits with the pb in a blender. Mix and gradually add small amounts of water until mixture sticks together. Press into a loaf pan or a container (if using a plastic or hard container I would line with baking paper to pull out easily)

3️ Place in the freezer while you make the caramel. Combine the pitted drained dates with the tahini and again add small amounts of water gradually as you blend together until it’s smooth, creamy but thick. Spoon on top of the base and return to the freezer.

4️ Set in the freezer for about 2-4 hours or you could leave them overnight. Remove and cut into bite sized pieces. Melt the chocolate and drizzle on top. Enjoy!

Store in a container in the fridge for up to a week or in the freezer for longer.
