Thai pumpkin soup

Winter is coming! (Or it may already be here!)


What better way to stay warm than to enjoy a warm homemade bowl of soup. I never realised how easy it is to make your own soup! You can make really hearty, healthy and delicious soup in little time. You will need a blender for this one and if you have a stick mixer, even better! I don't have one so I used my regular blender to mix it all up.


Pumpkin can be quite sweet so the tomato paste and lemon juice really balance out the sweetness.



Recipe:

This makes about 6 serves


1/2 pumpkin (about 1 kg) peeled and cut 1 litre vegetable stock 1 cup coconut milk 3 clove garlic 1 onion, very roughly chopped 1 small cube of ginger, peeled

2 tbsp tomato paste

2 tbsp olive oil

1/2 lemon juice 1 tsp of paprika 1 tsp of cumin Salt & pepper to taste


1. In a large pot heat the olive oil. Add the onion, garlic and ginger. The veggies only need to be roughly chopped because you will blend later.Once onion is fragrant, add the tomato sauce and veggie stock. Stir and add the coconut milk and stir again.


2. Add the pumpkin and season with lemon juice, paprika, cumin, salt & pepper. Stir and let it simmer for about 30 mins until pumpkin has softened.


2. Transfer to a blender and mix for about 1 to 2 minutes until all ingredients have blended together and you have a smooth consistency. Taste and adjust salt and pepper. If it's too thick you can add a little extra water.


3. Serve hot with some bread and enjoy! You can freeze this for later use. I love doing this so I can have a ready made soup waiting for me on cold days.
