This simple Thai yellow curry is hearty, wholesome, delicious and perfect for a midweek meal. The broccoli and cauliflower work beautifully with the yellow curry, pair it with rice for a nourishing plant based meal.
2 tbsp olive oil
2 cloves garlic
Handful spring onions, chopped
2 tbsp yellow curry paste
1 can coconut milk
1 small broccoli
1 small cauliflower
1 tsp ground ginger
1 tsp paprika
1 tsp ground turmeric
1/8 tsp cayenne pepper (optional)
1 tbsp soy sauce
Rice for 2 people
1. Heat the olive oil in a large pan and add the garlic and spring onion. Stir and cook for a few mins until fragrant.
2. Add the yellow curry paste and the coconut milk. Stir until well combined.
3. Add the ginger, paprika, turmeric, cayenne pepper and soy sauce. Stir and let it simmer on low heat for 5 mins to bring out the fragrance. Add the chopped veggies. Let it simmer for 25 mins until it thickens and the veggies have softened. Serve with cooked rice and garnish with crushed peanuts and spring onion. Enjoy!
