tofu & fried rice bowls

Tofu and rice is such a classic and simple vegan meal, perfect for a lazy mid-week dinner. This is a great way to use up any leftover rice or veggies from the night before. Frying the rice will freshen it up and add a burst of flavour. Add a drizzle of fresh lemon for a delicious citrus hit.



Recipe:

Serves 2


1 block firm tofu

2 tbsp olive oil

1 tbsp tamari

1 tsp smoked paprika

1/2 tsp pepper


For the rice:

Cooked rice for 2 people

2 tbsp olive oil

3 cloves garlic

1 tbsp tamari

1 tbsp rice vinegar

1 tsp smoked paprika

2 cups of veggies - peas/corn/carrots


1. Heat the olive oil in a large pan and add the tofu. Cook on all sides until brown. Add the Tamara, paprika and pepper. Stir to coat and cook for a further few minutes.

2. In a separate large pan or wok, heat the olive oil and add the garlic. Cook until fragrant and add the veggies. Stir and cook until they soften. Add the cooked rice, tamari, rice vinegar and paprika. Stir until evenly coated. Optional: add a pinch of dry basil leaves.

3. Serve with the tofu and enjoy!
