triple layer vanilla cups

Every layer of this tastes like heaven! These cups are not only delicious but are raw which means no baking (yay) and they have a little protein kick in there too. I love using a protein powder in my raw treats, it always adds a great flavour and I also like the sweetness it adds without me having to add much more. I made these with Botanika Blends vanilla cake batter flavour of plant protein.


1 serve is usually about 3 tbsp, I used 2 tbsp and I split this up between the layers. If you've got those sweet cravings, give these a try :)



RECIPE:

This made 6 cups


Base:

1 cup oats 2 tbsp coconut oil 1 tbsp cacao powder

2 tbsp peanut butter 1 tbsp vanilla flavoured protein powder


Middle:

3/4 cup peanut butter 1 tbsp coconut oil 1 tbsp vanilla flavoured protein powder

Small pinch of salt


Top layer: 3/4 cups cacao butter 1/2 cup desiccated coconut 1 tbsp cinnamon sugar


Plus about 2 tbsp dark chocolate for the drizzle

1️ In a bowl combine all ingredients for the base and mix together. It should be sticky, add a tiny bit of water if needed. Press the mixture into a muffin pan and place in the freezer for 15 mins.

2️ To prepare the middle layer melt the peanut butter, mix with the coconut oil, protein and salt. It should be pourable. Pour on top of the base layer and return to freezer for 15 mins.

3️ To prepare the top layer combine the ingredients and mix together. It should be thick from the coconut but pourable. Remove muffin pan and pour this layer on top. Return to the freezer for 1 hour. Once they've set you can transfer them to a container and store them in the freezer.


Remove 15 to 20 mins before serving to let them soften.


* If you can't find cacao butter I would suggest using a nut butter. You can also substitute it for coconut oil but as I already used coconut oil in the base and middle layer, a nut butter might work better.
