These chunky white choc cookies were such a treat! They're chewy and delicious, just like I remember Subway cookies to be. They only take about 10-12 mins to bake and will leave your house smelling amazing. The longer you bake them, the less chewy they will be fyi.
I used the Sweet Williams brand of white chocolate baking buttons (found at The Cruelty Free Shop - for anyone in Australia) but you can use any other vegan chocolate of your choice.

RECIPE:
220g vegan butter 225g caster sugar 300g plain flour 1 tsp baking powder 1 tsp vanilla extract Pinch of salt 150g white choc chips
1. Combine the softened butter + sugar and mix. Add the flour, baking powder, vanilla extract & salt. Mix to form a soft dough. Add the choc choc chips and combine together using your hands.
2. Preheat oven to 180°C
3. Use your hands to grab small sections of the mixture and place on a lined baking tray. Don’t roll into balls!! Keep em CHUNKY! They’ll flatten as they bake.
4. Bake for about 10-12 mins (if they start to brown on top they will start to lose their chewiness so if you want CHEWY, remove them just before they go brown)
6. Let them cool on the tray for 15 mins and gently transfer to cooling rack to cool completely. Enjoy!
