white choc truffles

I love making a batch of raw treats to snack on during the week, these white chocolate truffles are so delicious and incredibly easy to make. This recipe is for a small batch but you can double to make a larger batch. I used a vegan white chocolate (from Sweet Williams) and a plant based protein powder from The Newtrition Co in vanilla cupcake flavour.




RECIPE:

makes 6


45g raw cashews

50g oats

15g shredded coconut

30g The newtrition co protein in vanilla cupcake flavour

5g hemp seeds (or chia seeds)

25g coconut oil

45g maple syrup

80g white chocolate


  1. Combine the cashews, oats, coconut, protein powder, hemp seeds, coconut oil and maple syrup in a blender.

  2. Mix together until the mixture is sticky.

  3. Using your hands, roll into balls and place in a single layer on a tray or in a container. Set in the fridge for 2 hours.

  4. Melt the white chocolate, you can use a microwave or broiler method. Keep stirring as it melts, then let it cool for a few minutes.

  5. Dip each ball in the white chocolate and set back down on a tray lined with baking paper. The white chocolate will set very quickly. Transfer to a container and store in a container in the fridge for up to 4 days.
